Weekend Recipes: Instant Pot Favorites
Do you have an Instant Pot? Better yet, if you have one is it out of it’s box?
It’s a fan favorite but can be overwhelming and another thing to figure out. I will also say I don’t use it for cooking most of our meals, but for what I use it for I’m obsessed!
Now that it’s cooler, I’ll probably be using it more on the weekends to make soup or chili or bone broth so share all your favorite recipes with me!
Instant Pot Favorites
Whole Rotisserie Chicken
Yes I am aware that you can purchase these at the store and I usually do, BUT the nice thing about this is that you can get an organic chicken from Costco (their rotisserie chickens at ours aren’t organic) cook it yourself and then use your Instant Pot to make bone broth (see below). You can use this chicken in any recipe or eat it by itself!
Bone Broth
Drinking bone broth has a lot of benefits, especially if you need immune support or have digestive issues. That link I shared tells more about the benefits! I actually use this recipe and then cover the ingredients with water, cook on Manual for 120 minutes, and let the pressure release naturally.
Red Beans
This one might be my all time favorite recipe to cook in the Instant Pot! I’ve made red beans many ways, and I don’t have the uninterrupted time right now to stand over the stove and baby them to the right consistency. This recipe is the best red beans recipe I’ve made (taste and consistency!) and is so easy and fast! I didn’t have the fresh herbs when I made it this week, so I added in my Sage and Thyme Vitality essential oils and it was delicious!
Rice
Obviously goes with the red beans! But really, for it’s ability to cook perfect rice might be reason alone to get an instant pot. It’s rice perfection. The link I shared has times for all kinds of rice so you can make whatever kind you want!
Hard Boiled Eggs
My family will eat approximately half a dozen of these in one sitting so making them in higher quantities was a must! I ordered this rack from Amazon and I can make 14 at a time and I feel so accomplished! I don’t eat hard boiled eggs (believe me I wish I did) but I also bought these silcone steamer things and I make myself my own egg bites!
Shredded Chicken Tacos
This is the easiest recipe! I love anything Danielle Walker does, and this one is easy enough to do on a weeknight. It’s 3 ingredients people, you can do this! Danielle’s video is great to watch or it’s 1 lb boneless skinless chicken thighs or breast, 1 cup fresh tomatillo salsa, 1-3T taco seasoning (depends on how spicy it is) and THAT’S IT. Then put it on the Meat/Stew button for 15 minutes or 30 if frozen (yes you can cook frozen chicken in it!) She’s got more Instant Pot recipes in her book Eat What You Love.
That’s pretty much the extent of what I use it for right now, but as you can see it’s some pretty great staples and I love it!
